Preparation & Use
- Quick Soak: Rinse and sort beans in a large pot. To 1 lb. of beans (2 cups), add 8 cups of hot water. Bring to a rapid boil and boil for 2 minutes. Remove from heat, cover, and let stand for 1 hour. Drain the soak water and rinse the beans.
- Overnight Soak: Rinse and sort beans in a large pot. To 1 lb. of beans (2 cups), add 8 cups of cold water. Let stand overnight or for at least 6 to 8 hours. Drain the soak water and rinse the beans.
- Cooking Directions: Add 6 to 8 cups of hot water to the drained and rinsed beans. Simmer gently with the lid tilted until the desired tenderness is reached, which takes about 1-1/2 to 2 hours.
