Yucatan Cochinita Pibil
Ingredients:
- 3 pounds pork shoulder, cut into 2-inch chunks
- 2 tablespoons El Yucateco Achiote Paste
- 1/2 cup orange juice
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 banana leaves (or aluminum foil as substitute)
- 2 tablespoons vegetable oil
Instructions:
- In a bowl, whisk together the achiote paste, orange juice, lime juice, minced garlic, salt, pepper, and oil until smooth.
- Toss the pork chunks in the marinade, coating evenly. Cover and refrigerate for at least 4 hours, preferably overnight.
- Preheat the oven to 325 degrees F. Line a baking dish with banana leaves or foil.
- Place the marinated pork in the dish and cover tightly with the remaining banana leaves or foil.
