Cashew Crusted Salmon
Ingredients:
- 4 salmon fillets (about 6 oz each)
- 1 cup Emerald Whole Roasted And Salted Cashews, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1/4 cup panko breadcrumbs
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Preheat oven to 400 degrees Fahrenheit. Pat salmon fillets dry and season with salt and pepper.
- Mix chopped cashews, panko breadcrumbs, minced garlic, and olive oil in a small bowl.
- Spread Dijon mustard evenly over the top of each salmon fillet, then press the cashew-crumb mixture onto the mustard-coated side.
- Place fillets crust-side up on a parchment-lined baking sheet and bake for 12 to 14 minutes until the crust is golden and the internal temperature reaches 145 degrees Fahrenheit.

Ingredients:
- 1 pound boneless skinless chicken breast, cut into strips

- 1/2 cup sweet chili sauce
- 1 tablespoon soy sauce

- 3 cups cooked jasmine rice, for serving
Instructions:
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add chicken strips and cook until golden and no longer pink, about 5 to 6 minutes. Set aside.
- In the same skillet, add 1 more tablespoon oil, then saute garlic and ginger for 30 seconds until fragrant.
- Add sliced bell pepper and broccoli florets, stir-frying for 2 to 3 minutes until tender-crisp.
- Return chicken to the skillet. Add sweet chili sauce, soy sauce, and honey. Toss to coat everything evenly.
- Stir in the roasted cashews and cook for another minute until warmed through. Serve over jasmine rice.
