Preparation & Use
- Griddle Fry: Blend mix and cool water using a wire whisk until well-blended. Pour batter onto a greased, preheated griddle at 365°F to 375°F. Cook for 1 1/4 to 1 1/2 minutes per side, turning only once.
- Machine Mixing: Place water in the mixer bowl and add mix. Use a wire whip to mix on low speed for 30 seconds, scrape the bowl, and continue mixing on low speed for another 30 seconds.
- Batter Scaling: Use a #20 scoop (1.8 oz) for 4-inch pancakes, a #16 scoop (1.8 oz) for 5-inch pancakes, or two #10 scoops (6.0 oz) for 7-inch waffles.
- Handling Tips: Do not overmix the batter. Add more water if the batter becomes thick upon standing or if a thinner pancake is desired.
- Yields: A full 5 lb box yields 114 four-inch pancakes or 80 five-inch pancakes. A half batch yields 57 four-inch pancakes or 40 five-inch pancakes.
- Storage: Store in a cool, dry place to maintain freshness.
